I have made 4 16 oz ciabatta loafs, at one time, dense rugelach dough and many other doughy items. Ciabatta is a gloppy dough that requires high speed mixing with a dough hook. Even though the mixer weighs 55 pounds it jumps around the counter unless you physically hold it down. The paint will chip off in various locations. The mixer must be switched off when speeds are changed. I don't use it daily all day long like a commercial baker would but it seems like a good mixer for the price. For those who are used to mixers that start in slow speeds when initially switched on it is very good to be aware that this mixer can start right up in the highest selected speed when the start button is pressed. This may sling the contents of the bowl everywhere. Make sure you are starting in the correct speed.
